I used the same ratio of molasses to protein powder and almond butter as you did with the rice syrup, so a tablespoon for a serving. I also tried making a double batch with half molasses and half honey and it tasted the same, so if you wanted to use some other sweetener because it has things in it that you want that molasses doesn't have, cutting the molasses still works. I used powdered ginger (and have also used other spices: nutmeg, cloves, cinnamon, etc.) and haven't really measured them; just shake them on until it looks like a reasonable amount, and I use less of things like nutmeg and cloves because they're stronger.
