You have asked the right person! I track things a little obsessively!
For stage one, especially the last half, I tended to take 30 minutes or so (the first half, with only two sets, often took less time, if I stayed focused).
Stage two tended to take 40 minutes or so, keeping in mind that I never did the intervals after workout B, but did them at other times.
Stage three is taking 70 minutes or more. Ick.
I doubt an extra week off would hurt your progress much. I'm trying really hard to finish this stage before the con so I can feel I've come to a stopping place, since I really doubt I'll do any weights workouts there, but I'm not sure I will make it; I have work, and class, and all the household stuff that got put on hold while I prepared for a presentation at a work conference.
